Basil Garlic Pesto

Have fresh basil growing and want to make it last through the season? Make freezable pesto!

All you need to do is put about 4 cups of basil leaves in your food processor along with some garlic, start with 2 cloves and add more to taste. Process this all down a bit and then add parmesan cheese at least ¼ cup and add more to taste. Throw in a few tbsp of pine nuts. Process again. Then begin to add olive oil until it reaches the consistency that you want. (I typically make mine a bit thicker and then thin as needed with olive oil when I’m ready to use). You can freeze in any type of container but consider ice cube trays! Don’t be afraid to add more of the ingredients to get the flavor that you want. For example, if it gets too “garlicky” you can add more cheese or more basil – it’s really quite foolproof!
